Best-Ever Pumpkin Bread Recipe
Every fall, my grandma makes this cozy pumpkin bread recipe she found online years ago, and it’s become a seasonal staple in our family. The smell always reminds me of warm hugs and the comforting feeling of being surrounded by loved ones. Now I’m passing it along so you can enjoy a slice of autumn too!
Ingredients
- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ¼ tsp ground ginger
- 2 large eggs
- 1 cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil
- ¼ cup milk (or buttermilk for extra tang)
- 1 ½ cups pumpkin puree (not pumpkin pie filling)
- 1 tsp vanilla extract
- Optional: ½ cup chopped walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
- In a medium bowl, whisk together dry ingredients: flour, baking soda, baking powder, salt, and spices.
- In a large bowl, beat eggs and sugars until smooth. Add oil, milk, pumpkin puree, and vanilla. Mix well.
- Fold in dry ingredients gradually until just combined. Don’t overmix.
- Stir in optional mix-ins like nuts or chocolate chips.
- Pour batter into pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
