Every Christmas, the smell of chocolate and peanut butter filling our kitchen meant one thing: it was time for no bake cookies. My dad would gather my sisters and me around the counter, handing us spoons and letting us help stir the warm, fudgy mixture. We’d laugh, sneak tastes when we thought he wasn’t looking, and drop messy spoonfuls onto wax paper, waiting impatiently for them to set. It’s a tradition that’s been part of my life for as long as I can remember, and those cookies have become more than just a treat – they’re a piece of my childhood. Even now, they remain my favorite holiday sweet, carrying with them all the warmth, nostalgia, and joy of those family moments. Now, whenever I share the recipe, it feels like I’m sharing a little piece of our Christmas tradition too.
Ingredients (8 basics):
- ½ cup (1 stick) unsalted butter
- 2 cups granulated sugar
- ½ cup milk
- ¼ cup unsweetened cocoa powder
- ½ cup creamy peanut butter
- 2 teaspoons vanilla extract
- 3 cups quick oats
- Pinch of salt
Instructions:
In a medium saucepan, combine butter, sugar, milk, and cocoa powder. Bring to a boil over medium heat, stirring frequently.
Once boiling, let it cook for 1 minute (timing is crucial—too short and cookies won’t set, too long and they’ll be dry).
Remove from heat and stir in peanut butter, vanilla, and salt until smooth.
Mix in the oats until fully coated.
Drop spoonfuls onto parchment paper and let them cool until firm (about 30 minutes).
Yield: About 24 cookies.
